Today comes the rich and famous Aloo Dum. Though there are a lot of versions of this dish, i am going to stick to the basic recipe. Tastes great and not too tedious to cook and as i said it make pairs up amazingly with my cholar daaler kachuri/ Chana dal kachori. So lets get started :-
Ingredients:-
Potatoes - 8 medium sized (boiled)
Onion - 2 medium sized
Ginger paste - 1 teaspoon
Garlic paste - 1 1/2 teaspoon
Tomato - 1
Turmeric powder - 1/2 powder
Green chillies - 2
Red Chilly powder - 1/4 teaspoon
Cumin Powder - 1 teaspoon
Coriander powder - 1/2 teaspoon
Sugar - 1 teaspoon
Salt - To taste
Bay leaf - 2
Cumin seeds - 1/4 teaspoon
Oil - 1/2 cup
Method :-
Boil the potatoes, peel it and cut it into halves. Heat oil in a pan and fry the boiled potatoes on a very high flame for approx 2 mins. Take it off the pan and keep it aside. Grind the onion to a fine paste and heat oil again in a pan. When the oil gets heated add the cumin seeds and the bay leaf. When the Cumin starts spluttering add the one teaspoon of sugar to the oil and let the sugar melt. Make sure it doesn't get burned , once the sugar is melted add the onion paste and the turmeric powder and fry it on medium flame. When the onion is half cooked and the ginger & garlic paste. Coarsely chop the tomatoes and add it to the onion paste. When the tomato melts in the mixture add the cumin and coriander powder and then the boiled potatoes.
Add about 1 cup of warm water and let it simmer for about 10 mins. Add the garam masala , simmer it for two more mins and take it off the flame.
This basic Aloo Dum goes great with parathas, pooris and kachoris. Try it once and I am sure you will love it. This always has to be served hot and to someone YOU LOVE !!!
